Chicken Kisses

If you are planning to loose weight , so you must be looking for fast chicken breast recipes ...

HALF of a chicken breast has just 142 calories and just 3

 grams of fat and no carbs, sugar or fiber but there are 27

 grams of protein.  Needless to speak about essential

 vitamins and minerals for healthy diet in general.

Before I forget it has significant amount of omega-3 fatty 

acid, iron, calcium, and zinc....wohoo chicken breast does it 

all.

This recipe is enough for 3 days or 3 persons ....you will 

need...

1- 2 chicken breasts

2- salt and pepper

3- 1/2 tablespoon tandoori spice

4- juice of fresh 2 limes

5- 1 small onion

6- 2 tablespoons of vineager




Preperation:

=========

  wash chicken breasts with 2 tablespoons of white vineager 

....cut chicken breasts into medium size chunks ....

  cut the small onion into tiny peices ....Heat your non-stick 

skillet over a high temperature for two minutes, then add the 

onion + chicken+ tandoori spice+ fresh lime juice + 

salt&pepper, one after another....right away.

Cook for 30 minutes with stirring over a medium high

 temperature ... juices and flavours will mix together ...simmer

 for another 5 minutes on a medium temperature....done!

Chocoloate Half Moon Cookies



Ingredients:
=========
  • 2 and 1/2 cups of fine flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 unsalted melted butter
  • 3/4 cup granulated white sugar
  • 1 egg
  • Heart of one vinilla bean ( or vinilla powder)
  • 100 gms dark chocolate
preparation:
=========
* Mix flour+ baking powder+ baking soda+ salt alltogether in a big bowl and set aside......


* Mix melted butter+ sugar +egg+vanilla alltogether in another bowl 

* Add the flour mixture to butter mixture gradually untill well combined as a ball.

* Adjust ( 350 F.) preheated oven racks in the top and the bottom....line two baking sheets with wax paper or parchment paper.

*shape cookies as 1/4 inch size ....cookies will be placed 1 inch apart on a baking sheet.

* Bake in the ( 350 F.) preheated oven until golden brown or (10-20 minutes), whichever occurs first.

*Melt chocolate but not to burn it!....brush half of each ready cookie with melted chocolate...Let chocolate firm up.

*Can be stored in airtight containers for 5 days in room temperature.

Fast Okra, Bamia, Bhendi

Fast okra

If I said Okra, ladies' fingers, bhendi, bhindi, bamia, ochro or 

gumbo...It means the most mouth-watering dish you can eat 

after a long day at work....perfect for conceiving babies!



whether it is long or short, it has many health

 benefits especially for pregnant woman as it contains high

 doses of vitamin A, B vitamins (B1, B2, B6), vitamin C,

 and traces of both zinc and calcium. It is an ideal vegetable 

to eat for conceiving babies due to folic acid. Needless to

 mention high fiber content in okra as a bounty.

Small middle-eastern okra is preferable though.

preparation:

=========
1- 500 grams Okra frozen package (or fresh if you have time)

2-2 (two) full cup of tomato sauce ...or a tomato sauce can





3- 1 cup of meat broth

4- salt to taste

5- 1/2 teaspoon of Cayenne

6- juice of half of a lime

7- three cloves of garlic

8- 1 small onion

9- 1 teaspoon of cooking oil


Cooking:
=======

1- Place chopped small onion and three minced garlic cloves 

in a Medium-high preheated oiled sauce pan, till golden 

brown


2- add tomato sauce, 1 cup of meat broth, salt, and cayenne.

3- add okra and leave everything covered to simmer/thicken 

on a medium heat for 15 minutes.

4- check okra's level of tenderness...

5- add juice of half of a fresh lime.....done!

15 minutes MeatBalls

15 minutes meatballs:
=============
Meatballs dish is not a dish you only eat at mummy's house....It is easier than you think....
Ingredients:
========
1-500 gm ground red meat 
2- 1 tablespoon of ground dried coriander
3- 1 teaspoon of black pepper
4- 1 teaspoon of tandoori spice
5- 1/2 teaspoon of salt

Cooking:
=======
Mix all the ingredients in a big bowl very well.....Have fun making and placing meatballs in an oven dish (lightly oiled or oil-sprayed)......cover it with aluminum foil.....put it in a (400 F-205 C) heated oven for 15 minutes.....done!

Beef Liver in a skillet

Beef Liver:
======
Calves' liver is generally preferable over Beef....It is really tenderer and sweeter in flavor...Maybe liver is not very common food for good number of people around the world, yet it has significant amount of protein, vitamins, and iron.
 It is highly recommended for those who suffer from anemia, those who are newly-injured, and those who are in convalescence (recovery period).

preparation:
========
1-cut liver while it is semi-frozen
2-cut into very thin slices
3- soak liver slices in a mix of white vinegar, salt, and garlic....
4- set aside for 30 minutes-1 hour
5- throw out released liquid.



Cooking:
======
1- heat a skillet with two tablespoons of canola oil (or any other cooking oil)
2- place few slices of liver on the heated skillet.
3- add slices of green, red, or yellow pepper meanwhile


4- cover with a lid for 7 minutes

5- remove the cooked slices using a fork into a big plate furnished with ground parsley.
6- repeat till the full amount is done.

Instant Pickled Eggplant

Pickled Eggplant:

You feel bored of most of your dishes?.....Looking for something spicy, sour, and just delicious?....so I dam believe it is pickled eggplant, that can be eaten with your preferred bread.
preparation:
===========
In this recipe we will choose the long thin eggplant....sometimes it is named as Japanese eggplant...
1- cut every one into two halves 



2- for every half make a slit or incision lengthwise ....without full separation.


3- prepare the filling.

Garlic filling ingredients:
========
1- 100 gm of small carrot cubes
2- two tablespoons of cumin
3- two tablespoons of dried coriander spice
4- juice of a big lime (or lemon)
5- 1/4 cup of white vinegar
6- 1 teaspoon of salt
7- 1 teaspoon of cayenne ( or hot chili)
8- 4 peeled and cut garlic cloves.

filling preparation:
=============
Put all filling ingredients into blender (or food processor)... .blend them till 100% smooth.


Cooking:
=======
Fry the eggplant halves (almost 1 kilogram) in a skillet, using canola oil....


Drain them well on a paper towel.....fill them with previously prepared filling.....present them on a big plate.....with your preferred bread....done!

Radish Salad

Radish Salad

Radish is a lovely forgotten vegetable, that has lots of health benefits. Radish fights colds, clears the sinuses, cleanses the digestive system, and boosts your immune system.....In winter we do need radish in our meals....fresh radish is a key factor though.



This is how a fresh radish looks like....watch the video.

Ingredients:
=========

  • 1 big radish bunch
  • 2 tablespoons of olive oil
  • pinch of salt and pinch of pepper
  • 1 teaspoon of white vinegar
  • Juice of half of a medium size lime
  • pinch of cumin (important with radish)
  • spinach bunch or any green leaves as arugula
preparing:
=======
whisk olive oil, pepper, salt, vinegar, cumin, and lime juice in a bowl and set aside....that was the dressing.
bring a big plate ....furnish it with green leaves of your choice....cut the well-drained radish into thin circles...place the radish slices over green leaves evenly.....now pour the dressing over the radish plate, using a spoon evenly....you may garnish with chives (optional).... done!
